Classic sauerkraut soup

Classic sauerkraut soup

Ingredients:

  • Water (depending on how thick or thin soup you would like to cook)
  • Pork, approximately 500g (you can choose other meat as well – streaky or bacon)
  • 800 to 900g sauerkraut
  • 1 carrot
  • 1 onion
  • 1 tbsp tomato purée
  • Handful of pearl-barley or groats
  • Salt
  • Sour cream
  • Herbs
  • 2 potatoes

Sautee chopped pork in a saucepan. Pour water, boil and take foam off. Add finely chopped cabbage, a handful of pearl-barley or groats, put to boil. Sautee chopped onion and grated carrot, add tomato purée. Add the vegetables to the soup. Add salt to taste. Boil until ready. Serve with herbs and sour cream. For a more hearty soup, add boiled potatoes.

Since childhood I have always liked everything related to cooking.  I am the best at cooking the classic Latvian dishes, meat and soups. In winter, I cook the classic sauerkraut soup, it is hearty and warms you in a cold weather.
