Vegetable chicken soup with dumplings

Ingredients for broth:

  • 2 pcs chicken legs with a thigh
  • 2 carrots
  • Pack of frozen vegetables of choice
  • Onion
  • Garlic
  • Salt and pepper
  • Herbs – a piece of fresh celery root, parsley root, dill and parsley leaves, dried herbs

Ingredients for dumplings:

  • 2 eggs
  • 1/4 glass water
  • 1 glass flour
  • Salt

Start with making a broth. Put chicken legs in a pot, pour over with water, add salt and put to boil, take off foam from time to time. When the meat is ready (approximately after 40 minutes) (if it is possible to debone it, it is ready), take it out of the broth and put roots and herbs to boil: onion, garlic, pepper and boil for approximately 20 minutes, strain to obtain a clear broth. Put diced carrots and frozen vegetables in broth and boil on a medium heat.

Start making the dough for dumplings. Add eggs, a pinch of salt, water and mix everything. Gradually add the flour. The dough has to be thick but not hard. When vegetables are almost ready, add meat to the broth and boil again. Put in teaspoons of dumpling dough and stir after each piece. When all dumplings are in the broth, boil it for about 5 minutes. Serve it hot and sprinkle with fresh or dried herbs.
