Airy berry mousse

Ingredients:

  • 200g frozen berries of choice – strawberries, raspberries, black currants
  • 100g manna
  • 1l water
  • 200g sugar
  • Milk

Instructions:

Put the frozen berries in boiling water and let it boil again. Strain and rub the berries through a strainer. Add sugar and put to boil, gradually adding manna.  Boil and allow to cool. While cooling, stir accurately to ensure it does not thicken. When the mass is cool, mix with mixer until it becomes airy. Serve with cool milk.
