500 g ground beef
5 g Worcestershire sauce
1 onion
1 egg yolk
570 g flour
200 ml milk
100 ml water
170 g mayonnaise
50 g butter
27 g sugar
3 eggs
1 packet dry yeast
Pickles
20 g pickle juice
13 g yellow mustard
5 g sweet paprika
1/2 teaspoon white wine vinegar
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Slices of bacon
1 large tomato
1 red onion
Olive oil for frying
Lettuce
Sliced cheese
Sesame seeds
Salt
Pepper
Combine the mincemeat with Worcestershire sauce, finely chopped onion, egg yolk, 3 g salt and 3 g pepper. Knead and form the patties. Wrap in cling film and freeze for 20 minutes.
Prepare the dough for the buns. In a mixing bowl, combine 300 g flour, dry yeast, 14 g sugar, ½ teaspoon salt, warm milk, warm water, melted butter, and 1 egg. Mix well, add 270 g flour and knead until dough consistency. Divide the dough into five pieces and form round buns. Line the baking pan with parchment paper and grease with butter. Leave the burger buns on the baking sheet for 10 minutes. Then brush them with egg yolk and sprinkle with sesame seeds. Bake at 200 C for 15 minutes.
While the buns are baking, prepare the sauce for the burgers. In a bowl, combine 40 g finely chopped pickles, mayonnaise, yellow mustard, pickle juice, sweet paprika, white wine vinegar, 2 g salt, 3 g pepper, onion powder, garlic powder, 13 g sugar, and stir thoroughly.
Brown the bacon in a skillet. Then fry the beef patties – 6 minutes on one side, then flip, cover the skillet and fry for another 6. At the end, top the patties with slices of cheese.
Slice the burger buns horizontally and assemble the burger. Spread the sauce on the bun, add lettuce, sliced red onions, sauce, beef patty with cheese, a slice of tomato, bacon, pickles, sauce again, and top with the other bun. Enjoy!
