Cherry preserves

1 kg cherries
500 g jam sugar

First, remove the pits from the cherries. Place the cherries in a saucepan or pot and cook over moderate heat for 10 to 15 minutes. Add the jam sugar (regular sugar can be used, but it will form a liquid preserves) and cook for a further 10 minutes. Fill into sterilized jars.
