Latvian-style dressed herring

Latvian-style dressed herring

For 4 stacks:

10-cm diameter circle baking molds

200 g mayonnaise
200 g cream cheese
100 g sour cream
8 eggs
4 potatoes
4 carrots, medium
4 large Matjē herring fillets
4 beets
1 tart, crisp apple, large
1 tablespoon horseradish
1 teaspoon salt
1 tablespoon chopped parsley

Boil, peel, and grate the potatoes, carrots, and beets. Boil and grate the eggs. Grate the apple. Chop the herring.
Make the sauce by mixing mayonnaise, sour cream, horseradish, and salt.
Arrange the stacks. Make the base layer of grated potatoes and press it down with a spoon. Slather with some of the sauce. Add layers of carrots and eggs, press it down, slather with sauce. Add layers of herring and apple, spread sauce on top again. Top the stack with beetroot.
Add parsley and cream cheese to the remainder of the sauce to form a thick cream. Scoop it in a piping bag and form a white line across the middle of the stack to resemble the Latvian flag.
