Fried Baltic herring in spicy marinade

500g fresh, clean Baltic herring
Flour and salt mix for batter
1 egg

Marinade
3 cloves
2 corns allspice
4 corns black pepper
3cm fresh ginger
1 fresh chili pepper
2 bay leaves
1l water
5 medium onions
60ml apple vinegar (or white wine vinegar)
1 tablespoon sugar
1 tablespoon salt

Make the marinade. In a saucepan, mix cloves, all peppercorns, sliced ginger, chopped chili pepper without the seeds, and bay leaves. Cover with 1 liter of hot water and bring to a boil. Add the onions, sliced in rings or halved rings, stir and boil for a few more minutes. Remove from heat, add 60 ml apple cider vinegar, stir, and set aside. When cooled, add a tablespoon of salt and sugar, stir until dissolved.
Prepare the fish, a plate of salt and flour mix, and a bowl of beaten egg. Coat the fish in the flour, egg, and fry in hot oil until golden brown on both sides. Place in a dish while still hot, cover in marinade and refrigerate for several hours.
