Green peas puréed soup

Ingredients for soup:

  • 400g frozen or fresh green peas
  • 1l broth or bouillon cube
  • Leek
  • 10 dried or 5 fresh peppermint leaves
  • Butter for baking
  • Salt and lemon pepper

Ingredients for serving:

  • 1 large ripe avocado
  • Wholegrain black bread

Instructions:

In a melted butter bake diced leek, add salt and lemon pepper to taste. Put in a pot, add peas and cover with broth or hot water and add a bouillon cube. Boil until peas are soft, shortly before removing from the heat, add peppermint. Blend and boil again.

Serve hot with wholegrain black bread with cut fresh avocado.
