Hearty omelet

8 eggs
3 mushrooms
1 bell pepper
1 tomato
½ onion
1 teaspoon thyme
Pinch of ground black pepper
Cayenne pepper
Cherry tomatoes
Spring onions or chives
Mayonnaise
Salt

Cut the pepper, onio, and mushrooms. Fry lightly. Add a chopped tomato and fry for five minutes. On a different skillet, crack 8 eggs, add salt, pepper, Cayenne pepper, thyme, and stir. Fry some, the add the vegetables, stirring lightly into the egg from the top. Flip and fry a few more minutes. Decorate with cherry tomatoes and chives. Serve with mayonnaise.
