Beet snacks

2 beets
100 g cream cheese
40 g pickled herring
Basil leaves

Boil the beets until almost soft, then slice into about 5 mm-thick pieces. Arrange on a baking tray and bake for 20 minutes at 200 C. Lay the beets out on a plate. Put a small dollop of cream cheese and herring on each beet slice. Press the herring into the cheese a bit to make it more level. Top with beet slices, pipe cream cheese rosettes on top, and decorate with basil.
