2 teaspoons smoked paprika
1 teaspoon Cayenne pepper
1 teaspoon brown sugar
1/2 teaspoons salt
1/2 teaspoons garlic powder
1/2 teaspoons onion powder
1/2 teaspoons ground black pepper
3 chunks of beef brisket
250 g water
120 g sugar
120 g cranberries
Olive oil
5 g lemon juice
1 clove
Rosemary
In a small bowl combine smoked paprika, Cayenne pepper, salt, brown sugar, garlic powder, onion powder, and pepper – this will be the rub.
Line a baking dish with foil. Place the brisket chunks next to each other. Rub with the spice mix and olive oil thoroughly from all sides. Cover tightly with foil. Bake at 160 C for three hours or until tender.
In a saucepan, combine the water, sugar, cranberries, lemon juice, and clove. Boil for 15 minutes.
Serve with the clove and rosemary.
